美國海捕黃金鰈魚:

材料:
美國黃金鰈魚1包
薑1小舊
辣椒仔1隻
蔥2條

處理:
1. 黃金鰈魚,連包裝袋,清水解凍。
2. 薑,去皮,拍鬆,切碎。
蔥,切粒。
辣椒仔,切開,去籽,切粒。
3. 薑蔥內,加入調味料:
a. 糖1茶匙
b. 生粉1茶匙
c. 生抽1湯匙
做成芡汁。
4. 魚已解凍,刮去鱗。
5. 魚,清洗乾淨,廚紙索乾。

烹調:
1. 中火在平底鑊中燒熱油1湯匙。
2. 放魚落鑊。
3. 轉中慢火,慢煎。
4. 煎了2分鐘,反轉魚。
5. 煎了2分鐘,再反轉魚。
6. 轉最慢火,煎一煎底部,煎1分鐘。
7. 放魚上碟。
8. 洗淨平底鑊。
9. 芡汁,加入少量水分,倒入平底鑊,煮出薑味。
10. 芡汁煮至稠厚,淋上鰈魚上,完成,可享用。

US yellowfin sole:

Ingredients:
US Yellowfin fish 1 pack
Ginger (small) 1 No.
Red chili 1 No.
Green onion 2 Nos.

Preparation:
1. US yellowfin fish, defrost in its plastic package with tap water.
2. Ginger, get it peeled. Beat well and get it chopped.
Green onion, dice.
Chili, cut into 2 halves, remove seeds, then dice.
3. In ginger and green onion, add seasoning:
a. Sugar 1 tsp
b. Tapioca starch 1 tsp
c. Light soya sauce 1 tbsp
Make the sauce.
4. Fish has been defrosted. Get it scaled.
5. Fish, rinse thoroughly and dry with kitchen towel.

Steps:
1. Heat up 1 tbsp oil at medium flame in pan.
2. Put fish in pan.
3. Turn to medium~low flame, continue frying.
4. Have already fried for 2 minutes. Flip over the fish.
5. Have already fried for another 2 minutes. Flip over the fish.
6. Turn to low flame. Fry for 1 minute.
7. Put fish on plate.
8. Rinse the pan.
9. The sauce, add little water into pan, cook the ginger.
10. Sauce has been turned thick. Put it on fish. Complete. Serve.
